Left over duck leg, shredded
1 cup of pineapple cut into bite size pieces
Half a bag of micro greens or similar
Half a cup of mini tomatoes
Handful of cashew (can use peanuts or any type of nut)
Crispy duck skin (Crisp in a pan with a heavy pan on top as a weight)
Dressing:
Half a lime
Splash of vinegar
Drizzle of olive oil
Throw the greens into a bowl, add the tomatoes, warm the duck and pineapple in a pan, place on greens, mix the dressing together and drizzle over, garnish with nuts and crispy duck skin. Done. Enjoy!
