So at way past 9pm I got to creating some sweet genius in the kitchen, making 6 designer cookies for The Other Half.
Ingredients:
3/4 cup of whole wheat flour
1/2 cup of unbleached all purpose flour
1/2 cup of sugar
1 cup of un sweetened coconut
1 egg
Half a stick of butter
pinch of both soda and baking powder
pinch of salt
12 dried apricots chopped
handful of walnuts broken by hand to prevent small crumbs
a good chunk of fresh ginger grated ( you can use powdered but use less)
pre heated oven at 350
cream the butter and sugar together then mix in the egg
mix the dry ingredients (leaving out the fruit and nuts, you can put any type of fruit and nut you like)
then add the dry to the wet and fold together using a spatula, do not over mix
add the dry fruit and nut mix and stir until incorporated
place desired cookie sizes on a baking try with parchment paper, push down the middles or they might not cook.
Place them in the oven and bake for 12-15 mins, depending on how good your oven is. Mine's a piece of s#!t so take a little longer than most. They should spring back to the touch and have a nice golden colour.
