First thing the Other Half said to me this morning was:
'That was a great cookie last night!'
"What cookie?'
I found telltale signs of a late night baking adventure. The countertop was scattered with big chunks of chocolate cookie crumbs and I found a handful of blurry pictures on my camera. The peanuts butter and chocolate chunks (organic 70% cocoa and homemade peanut butter) were already pre-frozen from a previous bake, inspired by a Rolo stuffed cookie I saw on Pinterest. I suspect they were the key inspirational ingredient. I don't quite remember what I put in these 2 giant cookies, but here's my hungover guesstimate:
Ingredient 1/2 cup of whole wheat flour 1/4 cup of unbleached flour 1/2 cup of brown sugar (use any type of sweetener) 1/4 coco powder 1 egg 2 tbsp vanilla essence (make your own, soak a vanilla bean in alcohol) 1 tsp of cinnamon 1/4 tsp nutmeg 1/4 tsp salt chunk of chocolate 1 tbsp peanut butter Males 2 large cookies | Instructions Pre heat oven to 350 Sift and mix all the dry ingredient together Cream the sugar and butter together Add the egg and other wet ingredient together Scoop two dollops of dough onto a baking tray Place your center in the middle (a Rolo, Reese's PIeces or anything you like) Cover the cookie with remaining dough Slam in the oven Bake for 12-15 minutes Consume cookie Finish off bottle of wine Pass out... |
