1 roasted head of garlic
1tbsp of capers
I organic egg yoke coddled (immerse egg in boiling water for 50 seconds)
1 tbsp of mustard any type
juice of half a lemon or lime
salt and pepper
cup of olive oil
Blitz the first 6 items with a stick blender then slowly pour in the olive oil and continue to blend.
Croutons
Preheat oven to 400, place a baking tray in to heat up
Bread any type ( I used whole wheat organic from TJ's)
Roasted garlic head
Sprig of rosemary
salt and pepper
olive oil: Slice bread and toast lightly
Brush on the oil mixture, cut into desired sized squares and throw into the baking try and bake for 25-30, stir every 10 mins to insure even cooking
Tear up lettuce , toss in dressing, grate hard cheese, parmesan works best but any will do. Sprinkle on croutons and serve...done!
